Happy Day Cake

Preparation Time: Average
2-1/2 cups Swans Down Cake Flour, of sifted flour
1 tablespoon baking powder
1 teaspoon salt
1-1/2 cups sugar
1/2 cup butter, softened
1 cup milk
1 teaspoon vanilla
2 eggs

Preheat oven to 375 degrees. Sift together flour, baking powder, salt and sugar. Combine butter, dry ingredients, 3/4 cup of the milk and the vanilla in a large bowl. Mix on low speed until moistened. Beat on low speed 2 minutes. Add eggs and remaining milk. Beat 1 minute longer. Spread batter into 2 prepared 9-inch layer pans. Bake until tester inserted in center comes out clean, 20 to 25 minutes. Cool cakes in pan 10 minutes. Invert onto cooling racks.

Whipped Cream

Ingredients
1 cup whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract

Preparation
1. Beat whipping cream at low speed with an electric mixer until foamy; increase speed to medium-high, and gradually add powdered sugar and vanilla, beating until soft peaks form.

Yield
Makes about 2 cups


Strawberries

Ingredients
16 oz. strawberries
¼ cup sugar

Preparation
Slice strawberries, layer with sugar.

Place whipped cream over Happy Day Cake. Top with strawberries. Enjoy.


Hamburger Potato Scallop


1/2 pound ground beef
1/2 tsp. salt
1 pkg. scalloped or au gratin potatoes
2 oz. jar sliced pimento, drained
3 tbl. chopped green pepper (optional)

In large skillet, cook and stir ground beef until brown. Drain off grease. Add salt and potatoes; sprinkle with sauce mix. Add the amount of water and milk called for on potato package. Stir in pimento and green pepper, if used. Heat to boiling, stirring frequently for about 30 minutes or until potatoes are tender.

Makes 4-6 servings.
